Cavu Coffee opened Sept. 18 in the former Caribou Coffee location at 7755 Cox Lane.
Emily Schanie served as manager of the West Chester Caribou Coffee store for two years when she received notice the Minneapolis-based chain planned to close its five local stores in April. She and husband Kurt decided to take the plunge and open their own shop.
“I’ve always wanted my own coffee shop. We figured this was the perfect time. Everything fell in line,” she said.
The Hamilton couple met in the aviation field — Schanie is a former flight attendant and Kurt is a pilot.
“Cavu is an aviation term for ceilings and visibility unrestricted,” explained Schanie. “Essentially it means the perfect flying weather, basically blue skies.”
Now the shop is striving to serve up the perfect cup of joe. The shop uses beans roasted by La Terza Artisan Coffee Roasterie in Clifton in addition to espresso drinks, teas, smoothies and a variety of baked goods and desserts.
What sets Cavu apart is the specialty extraction methods it offers, such as siphon brewing and pour-over methods, she said.
“We can get a real true pure extraction of the coffee for the true coffee connoisseur who wants that exceptional cup,” said Schanie.
